Excessive dietary restrictions do not prevent weight gain permanently. When the body feels a crisis, the brain focuses on appetite and attempts to forcibly absorb nutrients into the body. These nutrients, when not burned, will be stored as fat, resulting in weight rebound. Weight gain immediately occurs as soon as the body is done from its fast, or when replacement of essential nutrients fails.
This also means weight rebound is less likely to occur if body fat is gradually reduced without excessive dietary restrictions.
